Dragon Fruit Pizza Recipe
Serving Description: 1 pie slice, Prep Time: 10 minutes, Cook Time: 10 minutes)
1 package of ready to use pre-made sugar cookie dough
8 ounces cream cheese
1/2 cup powdered sugar
1 tablespoon lemon juice
3 dragon fruit, peeled and sliced-Use a red or magenta variety to add color to the dish.
3 kiwi, peeled and sliced
1 cup strawberries, hulled and cut in half
1/4 cup apricot glaze
Directions; Roll out cookie dough into a 12 inch round.
Bake 10-12 minutes or until lightly browned. Allow to cool completely. Meanwhile, prepare fruit by washing and slicing it into 1/4 inch slices.
Cream together the cream cheese, powdered sugar and lemon juice.
When the crust is cool, top with the cream cheese mixture.
Lay fruit in a circle on top of the cream cheese mixture.
Spread apricot glaze over fruit.
Chill until ready to serve.
(Note: Any combination of Dragon Fruit or other fruit can be used for this recipe.)
Tuna with Dragon Fruit Salsa and Scallion Aioli
1 loaf French Baguette sliced 1/4 inch thick and toasted
1 pound Tuna (sushi grade) sliced 1/8 inch thick square
Dragon fruit Salsa ingredients
1 Dragon Fruit diced fine
2 Jalapeno Chile Jalapeno Chile diced fine
1 Pineapples diced fine
2 tablespoons Cilantro Cilantro chopped fine
1 Lime juice freshly squeezed
Salt to taste
Scallion Aioli ingredients
2 tablespoons Olive Oil
1 bunch Scallions sliced thin
1 cup Mayonnaise
1 tablespoon Dijon Mustard
1 Lime juice freshly squeezed Salt and Pepper to taste
Frisee Lettuce for garnish
Preheat oven to 350°. Place cut bread on a sheet pan and lightly brush with olive oil.
Dice the Dragon fruit, Pineapple, and Jalapeno. Then chop the cilantro, mix in a bowl and add lime juice and salt.
Heat fry pan, add olive oil then scallions cook for 1 minute. Let cool and then mix, mayonnaise, dijon mustard, lime juice, scallion, and salt and pepper.
Spread Aioli on baguette, slice the tuna and place on the baguette. Then place some of the salsa on top of the tuna. To finish place a dollop of the aioli on the top of the salsa and garnish with a piece of frisee. Now Enjoy!
How to make Dragon Fruit Jelly
25 – 30 grammes agar-agar (jelly)
100 grammes sugar
1 litre water
200 grammes of dragon fruit ( Any red variety, cut into 1cm cubes)
3 pieces pandan leaves (knotted)
Bring water to boil in a pot. Add sugar, agar-agar and pandan leaves. Stir on medium low heat till sugar and agar-agar dissolved.
Once sugar and agar-agar completely dissolved, turn off heat. Discard pandan leaves.
Pour mixture onto a suitable 2 inch deep tray or moulding and drop Dragon Fruit cubes into the mixture. Allow to cool down before chilling it in the fridge.
Dragon Fruit Sorbet
2 dragon fruits any variety
3/4 cup cold water
1 tablespoon lemon juice
2 tbsp sugar
Cut the dragon fruit in half. Scoop out the flesh with a spoon. Reserve the halves for serving, if desired. Freeze the halves until you are ready to fill them.
Place the pulp of the dragonfruit in your food processor along with the water, lemon juice and sugar. Pulse until smooth. Pour into an ice cream maker and churn until frozen. Spoon the sorbet into the frozen halves, or freeze the sorbet until ready to serve.
(Makes about 2 cups of sorbet.)
150g Digestive biscuit crumbs or similar (e.g. Nice biscuits)
110g butter, melted (unsalted is okay)
250g cream cheese, softened
50g caster sugar
400g DragonFruit flesh, drained and blended into puree.
1 1/2 tbsp gelatine powder
2 tbsp water
Crust: Combine biscuit crumbs with melted butter and press into the bottom of a 18cm (7") loose based (springform) pan. Chill in the fridge until firm.
Filling: Beat cream cheese, sugar and whipping cream until smooth. Add in DragonFruit puree and mix well.
Mix gelatine powder with water, double-boil till dissolved and mix into filling mixture. Pour onto crust and chill in the fridge for at least 3 hours.
